Breakfast Deluxe

I can’t believe winter is finally beginning to melt away, well sort of. It is sunny outside, the air smells fresh, and I can almost feel the grass trying to pop it’s little green head from under its white coat of misery. Yes, last night we finally changed the clock in the effort to “spring forward” an hour.

With the spring finally and officially hear, well maybe just in spirit, it is time to lighten the meals, brighten the colors, and up the flavors. Today’s post is all about my beautiful “Breakfast Deluxe” recipe. It’s an easy meal to make, packed with nutrients, protein, and a little bit of carbs so it keeps you full throughout the day. It’s also a great grab-and-go, which you know I love to make, so I hope you enjoy the recipe and try it out for yourself.

BREAKFAST DELUXE

servings size: about 2

Ingredients:

1 potato (cut into small cubes)

4 eggs (scrambled)

2 tomatoes (diced)

1/2 white onion (diced)

1 scallion (diced)

1/4 cup monetary jack (you can use any cheese you have at home)

1 small piece of feta cheese

spices: turmeric, salt, pepper, chili powder, garlic powder

2 TBS vegetable oil

Instructions:

Heat a medium-sized pan with 2 TBS vegetable oil at medium-high heat.  Place the onions and let them cook until they become translucent, but do not burn them, it takes about 3-4 minutes.

Place the potatoes and season with salt and pepper. Let the potatoes cook for about 10 minutes stirring frequently to keep them from burning.

Season the potatoes with turmeric, chili powder, and garlic powder and continue stirring until potatoes have softened and become a little crispy brown on the outside, about another 10 minutes.

Then add the tomatoes, add salt and pepper to season the tomatoes and keep stirring. Next add the green scallion and keep stirring.

In a small bowl combine the eggs and cheese and beat lightly. Add the cheese and egg mixture to the pan. Let it cook for about 3 minutes, then lower the heat to medium/medium-low and let it cook for another 2-3 minutes. Check to see if the bottom of the egg has cooked, if so flip gently. The mixture will not stay together, so you can do it in parts.

Once the egg has cooked taste and see if any additional salt or pepper needs to be added, if not place on a plate and serve hot.

*Goes great with a piece of freshly baked bread, avocado, or even some cut up cucumbers.
